- 150 grams All-purpose flour (medium-protein)
- 50 grams Rice flour
- 1 tsp Garlic powder
- 1 tsp Chicken-flavored bouillon powder

- 1/4 tsp Ground black pepper
- 150 ml Ice water
- 500 ml Cooking oil for deep frying

- 1 Wash the chicken thoroughly, then rub it with lime juice and mashed garlic. Let it sit for 15-20 minutes to remove any raw smell and let the seasoning soak in.
- 2 Rinse the chicken briefly, then pat dry with paper towels or a clean cloth.
- 3 In a bowl, mix the all-purpose flour, rice flour, garlic powder, bouillon powder, salt, and pepper together to make the dry coating.
- 4 Take half of the flour mixture and gradually add ice water while stirring until it forms a slightly thick wet batter (this creates that craggy, crunchy texture).
- 5 Dip the chicken into the dry flour first, then into the wet batter, then coat it again in the dry flour, pressing firmly so plenty of flour sticks and forms a rough, craggy texture.
- 6 Heat a generous amount of oil over medium heat and fry the chicken until fully submerged. Fry over medium-low heat for 12-15 minutes so it cooks through and turns crispy on the outside.
- 7 Remove the chicken once it's golden brown and sounds crispy, then drain on a rack or paper towels.
- 8 For the sambal, boil the bird's eye chilies, curly chilies, garlic, and tomato for 5 minutes until softened, then remove and drain.
- 9 Coarsely grind the boiled sambal ingredients together with salt, sugar, and bouillon powder using a mortar and pestle, adjusting the texture (chunky or smooth) to your liking.
- 10 Heat 2 tbsp of oil and briefly sauté the ground sambal until fragrant and fully cooked, then remove from heat.
- 11 Smash or pound the fried chicken using a pestle or rolling pin until slightly flattened and the fibers open up, then drizzle or mix it with the sambal right on the mortar.
- 12 Serve the ayam geprek with warm steamed rice, fresh cucumber, and sliced cabbage on the side. Enjoy while it's still warm and crispy.

• Use ice water for the wet batter so the flour crust stays extra crispy and doesn't turn soggy too quickly.
