  • 1 whole Free-range chicken, cut into 8 pieces
  • 5 cm Fresh turmeric, crushed
  • 4 cm Ginger, crushed
  • 5 clove Garlic, smashed
  • 3 tbsp Sesame oil
  • 3 tbsp Soy sauce
  • 1 tsp Salt
  • 1 tsp Granulated sugar
  • 1.5 liters Water
  • 2 stalks Scallions, sliced
  • 2 tbsp Wolfberries / goji berries (optional)

👩‍🍳 Instructions

  1. 1 Wash the chicken pieces thoroughly, rub with a little salt, let sit for 10 minutes, then rinse again.
  2. 2 Heat the sesame oil in a pot, then sauté the ginger, turmeric, and garlic until fragrant and lightly browned.
  3. 3 Add the chicken pieces and stir until the surface changes color and the seasoning is absorbed.
  4. 4 Pour in the water, bring to a boil, then lower the heat. Simmer over low heat for 30-40 minutes until the chicken is tender.
  5. 5 Add the soy sauce, salt, and sugar. Adjust the seasoning to taste.
  6. 6 Add the goji berries if using, and cook for another 5 minutes until softened.
  7. 7 Remove from heat, sprinkle with sliced scallions, and serve piping hot.

💡 Tips

• Use free-range chicken for a more flavorful broth that isn't overly fatty

• Don't let the sesame oil get too hot when sautéing the turmeric, or it will taste bitter

• You can add a splash of halal cooking wine substitute (lime juice mixed with broth) for a more complex aroma
