  • 1 whole duck duck meat, cut into 8-10 pieces
  • 1500 ml thick coconut milk from 2 coconuts
  • 2 tbsp tamarind water
  • 2 whole limes
  • 15 whole curly red chilies
  • 10 whole red bird's eye chilies (optional, adjust to desired spiciness)
  • 12 whole shallots
  • 6 clove garlic
  • 6 whole candlenuts, toasted
  • 3 cm ginger
  • 5 cm galangal, bruised
  • 3 cm roasted turmeric
  • 3 stalk lemongrass, bruised
  • 6 leaves kaffir lime leaves
  • 1 leaf turmeric leaf, tied in a knot
  • 3 leaves bay leaves
  • 4 tbsp toasted grated coconut (kerisik), ground fine
  • 2 tsp salt
  • 1 tbsp palm sugar, shaved
  • 5 tbsp cooking oil for sautéing

  1. 1 Wash the duck pieces thoroughly, rub with lime juice and a little salt. Let sit for 15 minutes, then rinse again to remove the duck's characteristic gamey smell.
  2. 2 Boil the duck in boiling water together with 1 stalk of lemongrass for 20-25 minutes to tenderize the meat and reduce excess fat. Drain.
  3. 3 Grind the red chilies, bird's eye chilies, shallots, garlic, candlenuts, ginger, and roasted turmeric until completely smooth using a blender or mortar and pestle.
  4. 4 Heat the oil and sauté the ground spice paste together with the galangal, lemongrass, kaffir lime leaves, bay leaves, and turmeric leaf until fragrant and the oil starts to separate at the edges of the pan, about 10-15 minutes over medium heat.
  5. 5 Add the pre-boiled duck pieces, stirring well with the spice paste until every piece is fully coated.
  6. 6 Pour in the coconut milk little by little while continuously stirring to prevent it from splitting. Cook over medium heat, stirring occasionally.
  7. 7 Once it comes to a boil, reduce the heat. Add the tamarind water, salt, and palm sugar. Stir well.
  8. 8 Cook over low heat, stirring occasionally, for 2-2.5 hours until the sauce reduces, thickens, and turns a dark brownish-black color.
  9. 9 Add the ground toasted coconut (kerisik), stir well, and continue cooking until the sauce is truly thick and glossy with oil, about 30-45 minutes more.
