- 250g warm white rice (slightly sticky)
- 2 sheets large sheets of nori
- 1 tbsp rice vinegar
- 1/2 tbsp sugar
- A pinch of salt
- Filling: 2 eggs, made into a thin omelet and cut into long strips
- 1/2 cucumber, cut into long strips
- 1 stick crab stick (surimi)
- To serve: sachet soy sauce
- Sachet mayonnaise

👩🍳 Instructions
- 1 Mix the rice vinegar, sugar, and salt — stir until dissolved
- 2 Pour over the warm rice and mix gently with a folding motion using a spatula (don't stir roughly)
- 3 Place a sheet of nori on a bamboo rolling mat (or plastic wrap)
- 4 Spread a thin layer of rice evenly over the nori, leaving about 3/4 inch bare at the top edge
- 5 Arrange the omelet strips, cucumber, and crab stick along the bottom third of the rice
- 6 Roll tightly from bottom to top, pressing gently as you go
- 7 Moisten the edge of the nori with a little water to seal it
- 8 Let it rest for 2 minutes to set
- 9 Slice with a sharp knife dipped in water — this should give you 6-8 pieces
- 10 Arrange nicely in the lunchbox, along with a sachet of soy sauce and mayonnaise
💡 Tips
• Dip the knife in water before every cut so the rice doesn't stick
• Don't use rice that's too hot — lukewarm is just right
• Filling variations: avocado, smoked salmon, teriyaki chicken
• If you're not slicing the roll right away, wrap it whole in plastic wrap — it stays fresh longer
