  • 500 ml full cream liquid milk
  • 100 ml heavy cream (whipping cream)
  • 3 tbsp granulated sugar
  • 150 grams cream cheese
  • 3 tbsp plain yogurt
  • 2 tbsp instant coffee powder
  • 100 ml hot water
  • 2 tbsp granulated sugar for coffee syrup
  • 2 tbsp unsweetened cocoa powder
  • 4 slices ladyfingers or sponge cake
  • 2 tbsp chopped toasted almonds

👩‍🍳 Instructions

  1. 1 Mix the liquid milk, heavy cream, and sugar in a container. Stir until well combined, then pour into a thin, flat pan and freeze for at least 6 hours or overnight until it becomes a milk ice block.
  2. 2 Meanwhile, dissolve the instant coffee with hot water and sugar, stirring until well mixed. Set aside and let cool to make the coffee syrup.
  3. 3 Make the homemade mascarpone-style cream: whisk the cream cheese and plain yogurt until smooth and lump-free. Set aside in the fridge.
  4. 4 Briefly dip the pieces of ladyfinger or sponge cake into the cooled coffee syrup, being careful not to let them get too soggy.
  5. 5 Once the milk ice is completely frozen, remove it and shave using a food processor or a special ice shaver until it turns into fine, snow-like flakes.
  6. 6 Arrange the shaved ice in a serving bowl, placing the coffee syrup-soaked cake pieces in the center.
  7. 7 Pour the mascarpone-style cream on top, drizzle with a bit of the remaining coffee syrup, then sprinkle with cocoa powder and chopped toasted almonds.
  8. 8 Serve immediately while cold so the shaved ice stays soft and doesn't melt too quickly.

💡 Tips

• Freeze the milk for at least overnight so the shaved result is finer and doesn't clump.

• Use a food processor with a sharp blade so the ice can be shaved as smooth as real snow.

• Don't soak the cake too long in the coffee syrup so it doesn't fall apart when assembling.

• Serve immediately after shaving, as the bingsu's texture melts quickly at room temperature.
