👩🍳 Instructions
- 1 Put the crackers into a thick plastic bag and coarsely crush them using a pestle or a bottle until they break into small pieces (don't crush them into fine powder—leave some texture so they stay crunchy).
- 2 Melt the dark cooking chocolate and butter using a double-boiler technique (heat water in a pot, place a bowl with the chocolate and butter on top, stirring constantly until completely melted and smooth).
- 3 Remove from the heat, let it cool slightly, then add the powdered sugar, cocoa powder, and sweetened condensed milk. Stir well until you get a smooth chocolate mixture.
- 4 Add the crushed crackers, chopped nuts, and raisins into the chocolate mixture. Gently fold with a spatula until everything is evenly combined and the cookie pieces are coated in chocolate.
- 5 Lay out plastic wrap on the table, pour the mixture onto it, then shape it into a log resembling a salami roll about 2-2.5 inches in diameter, using the plastic wrap to help pack it tightly.
- 6 Roll the plastic wrap tightly around the cylinder shape, twisting both ends closed like wrapping a candy so the shape stays compact with no air pockets.
- 7 Store the roll in the refrigerator for at least 3-4 hours, or overnight, until it is completely firm and set.
- 8 Remove from the refrigerator, unwrap the plastic, then roll the chocolate log in powdered sugar until the surface is evenly coated (this gives it the look of the powdery coating on real salami).
- 9 Slice with a sharp knife into pieces about 0.4-0.6 inch thick using a pressing motion (not sawing) so the slices stay neat and don't crumble. Serve immediately.
💡 Tips
• Use good-quality dark cooking chocolate so the flavor isn't too sweet and the texture is firmer once chilled.
• Don't crush the crackers too finely—leave some coarse pieces so you still get that crunchy texture with every bite.
• Keep any leftover chocolate roll in the refrigerator and only slice it right before serving so it stays neat and doesn't get soft.
• You can swap the almonds for roasted peanuts, or add dried fruit like cranberries for a flavor variation.
