- Chocolate Genoise: 6 eggs
- 180g sugar
- 120g all-purpose flour
- 60g dark cocoa powder
- 30g butter, melted
- 100ml Kirsch Syrup: water
- 80g sugar
- 3 tbsp Kirsch or cherry juice
- 600ml Filling: heavy cream, whipped with 3 tbsp powdered sugar
- 400g canned sour cherries (morello cherries), drained
- 200g dark chocolate, for shavings and decoration
- Fresh or maraschino cherries, for garnish

- 1 Genoise: Whisk the eggs and sugar over a bain-marie until warm, then transfer to a mixer and beat until thick and at the ribbon stage.
- 2 Fold in the sifted flour and cocoa powder using a gentle folding technique.
- 3 Fold in the melted butter.
- 4 Bake in a 22 cm (8.5-inch) pan at 350°F (175°C) for 25-30 minutes.
- 5 Let cool completely, then slice into 3 horizontal layers.
- 6 Kirsch syrup: Cook the water and sugar until dissolved, add the Kirsch, then let cool.
- 7 Assemble the torte: Brush the first genoise layer with the syrup.
- 8 Spread with cream and arrange the sour cherries on top.
- 9 Add the second layer, brush with syrup, then spread with cream and cherries.
- 10 Add the third layer and brush with syrup.
- 11 Frost the entire cake with the remaining cream.
- 12 Decorate: Press chocolate shavings onto the sides of the cake, pipe cream rosettes on top, and finish with red cherries and chocolate shavings on top.
- 13 Chill for 4 hours.
💡 Tips
• The genoise batter should reach the ribbon stage — when lifted, the batter should fall in a ribbon that doesn't disappear right away.
• Brush the syrup on with a pastry brush so the genoise stays evenly moist without becoming soggy.
• The best Black Forest torte uses real tart morello cherries, not sweet cherries.
