  • 500 grams purple sweet potato
  • 3 tbsp cornstarch
  • 3 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 tbsp margarine
  • 100 grams, cut into small cubes cheddar cheese
  • 1 egg, beaten chicken egg
  • 150 grams breadcrumbs (panko-style breading)
  • 500 ml, for frying cooking oil

👩‍🍳 Instructions

  1. 1 Peel the purple sweet potatoes, cut into chunks, then steam for 20-25 minutes until tender when pierced with a fork.
  2. 2 While still hot, mash the sweet potato with a fork or pestle until completely smooth with no lumps.
  3. 3 Mix the mashed sweet potato with cornstarch, sugar, salt, and margarine. Stir until the dough can be shaped and no longer sticks to your hands.
  4. 4 Take about 2 tbsp of the dough, flatten it in your palm, and fill the center with a piece of cheddar cheese.
  5. 5 Shape the dough into a ball, making sure the cheese is fully sealed inside with no gaps that could let the cheese leak out during frying.
  6. 6 Dip the sweet potato ball into the beaten egg, then roll it evenly in breadcrumbs. Press gently so the breadcrumbs stick well.
  7. 7 Chill the breaded sweet potato balls in the refrigerator for 15 minutes so they firm up and don't fall apart during frying.
  8. 8 Heat oil over medium heat and fry the purple sweet potato balls until golden brown and crispy, about 3-4 minutes, turning occasionally.
  9. 9 Remove and drain on paper towels to remove excess oil, then serve while warm.

💡 Tips

• Make sure to mash the sweet potato while it's still hot for a smoother texture that's easier to shape.

• Store unfried sweet potato balls in the freezer if you want to keep a stock on hand — just fry them straight from frozen over low-medium heat.

• Use cheese cut into cubes rather than shredded so you get a more noticeable melty bite.

• If you don't have breadcrumbs, you can substitute homemade breadcrumbs made by blending dried white bread.
