- 400 ml full-cream liquid milk
- 200 ml heavy cream
- 3 bags black tea bags or strong black tea powder
- 70 grams granulated sugar
- 1 sachet (7 grams) plain agar-agar powder
- 100 grams instant tapioca boba/bubble pearls
- 3 tbsp liquid brown sugar (for the boba)
- 1/4 tsp salt
- 100 ml water

- 1 Boil the water until it comes to a rolling boil, then add the tapioca boba. Cook according to the package instructions (usually 15-20 minutes), stirring occasionally so they don't stick together.
- 2 Once cooked and floating, remove the boba and soak them in the liquid brown sugar for at least 10 minutes so they absorb the flavor and don't stick to each other.
- 3 Heat the liquid milk together with the black tea bags over low heat, making sure it doesn't come to a boil. Let it sit for 5-7 minutes to release the tea aroma, then remove the tea bags.
- 4 Add the agar-agar powder, granulated sugar, and salt into the tea-infused milk, then whisk well so no lumps form.
- 5 Turn the heat to low-medium and cook while continuously stirring until it reaches a gentle simmer and the agar-agar is completely dissolved, about 5 minutes.
- 6 Turn off the heat, pour in the heavy cream, and stir until fully combined with no lumps.
- 7 Prepare glasses or small molds, pour a little boba into the bottom of each glass, then pour the panna cotta mixture on top, leaving a little space at the top.
- 8 Let it cool to room temperature, then refrigerate for at least 3-4 hours or until fully set.
- 9 Before serving, add more boba on top of the set panna cotta and drizzle a little of the remaining liquid brown sugar for a glossy finish.

โข Use a quality black tea like Assam or Earl Grey for a stronger, more authentic aroma.
โข Don't let the milk come to a full boil, as it can cause the panna cotta's texture to break.

โข If you like it sweeter, add a little sweetened condensed milk when mixing in the cream.
