  • 200 grams graham crackers or Marie biscuits, finely crushed
  • 100 grams melted butter
  • 400 grams cream cheese, room temperature
  • 200 grams thick plain yogurt
  • 120 grams granulated sugar
  • 3 eggs
  • 2 tbsp cornstarch
  • 1 tsp vanilla powder
  • 1 tbsp instant coffee powder, dissolved in 1 tbsp hot water
  • 100 grams granulated sugar for caramel
  • 100 ml heavy cream
  • 1/4 tsp salt

  1. 1 Mix the crushed biscuits with the melted butter until evenly combined and clumped together like wet sand. Press firmly into the bottom of a 20 cm (8-inch) round pan lined with parchment paper. Chill in the fridge while you prepare the rest of the batter.
  2. 2 Preheat the oven to 160°C (320°F). Prepare a larger pan filled with hot water for a water bath, which will help prevent the cheesecake from cracking.
  3. 3 Beat the cream cheese and granulated sugar with a mixer on low speed until smooth and soft — don't overbeat, so you don't incorporate too much air.
  4. 4 Add the plain yogurt and mix well with a spatula. Add the eggs one at a time, stirring gently after each addition; be careful not to overmix.
  5. 5 Add the cornstarch, vanilla powder, and coffee mixture. Stir until the batter is smooth with no lumps.
