- 500ml heavy cream
- 5 yolks eggs
- 100g granulated sugar (for the custard)
- 1 tsp vanilla extract

- 1 Preheat the oven to 300°F (150°C).
- 2 Heat the cream in a saucepan over low heat until it just starts to steam — do not let it boil.
- 3 Whisk the egg yolks with the sugar and salt until pale and smooth.
- 4 Slowly pour the warm cream into the egg mixture while whisking constantly.
- 5 Add the vanilla extract and stir until well combined.
- 6 Strain the mixture through a fine-mesh sieve.
- 7 Pour into 4 ramekins, then place the ramekins in a baking pan filled with hot water halfway up the sides of the ramekins (a bain-marie).
- 8 Bake for 40–45 minutes, until the custard is set but still slightly jiggly in the center.
- 9 Let cool, then refrigerate for at least 4 hours.
- 10 Just before serving, sprinkle a thin layer of sugar on top and torch it until golden brown and caramelized.

• The key to success is a low oven temperature and the bain-marie technique, so the custard cooks evenly.
• If you don't have a kitchen torch, you can use your oven's broiler instead, but watch it closely the whole time.
• The custard should still jiggle slightly in the center when you take it out — it will set perfectly once chilled.
• You can add other flavors too, such as lavender, Earl Grey, or espresso.
