  • 500 grams Fresh medium-sized squid, cleaned and cut into rings
  • 4 tbsp Unsalted butter
  • 6 cloves Garlic, finely minced
  • 1/2 Onion, chopped
  • 2 tbsp Oyster sauce
  • 1 tbsp Soy sauce
  • 1/2 tsp Granulated sugar
  • 1/2 tsp Ground pepper
  • 1 tbsp Lime juice
  • 3 tbsp Water
  • 2 stalks Green onion, sliced
  • to taste Salt
  • 1 tbsp Oil for sautéing

  1. 1 Wash the squid thoroughly, remove the ink sac and cartilage, then rub with lime juice and a little salt. Let it sit for 10 minutes to reduce the fishy smell, then rinse again.
  2. 2 Briefly boil the squid (30-45 seconds) in boiling water until it changes color, then immediately remove and drain so it doesn't turn tough.
  3. 3 Heat the oil and butter in a pan over medium heat. Once the butter has melted, add the minced garlic and sauté until fragrant and slightly golden.
  4. 4 Add the onion and sauté until softened and fragrant.
  5. 5 Pour in the oyster sauce, soy sauce, sugar, and pepper. Stir well with the sautéed seasonings.
  6. 6 Add the pre-boiled squid, stir quickly so the seasoning coats evenly. Add the water and cook briefly, about 1-2 minutes, so the squid stays tender.
