Xue Hua Bing, or Taiwanese snow ice, is famous for its soft, melt-in-your-mouth texture that's a world apart from regular shaved ice. Paired with sweet stewed red beans and a drizzle of sweetened condensed milk, this chilly dessert is a favorite at Taiwan's night market stalls. It's perfect for hot weather or as a refreshing way to finish off a meal.

  • 400 ml whole milk
  • 100 ml sweetened condensed milk (white)
  • 2 tbsp granulated sugar
  • 1 tbsp plain gelatin powder (non-pork)
  • 3 tbsp boiled water (cooled)
  • 150 grams dried red beans (adzuki beans)
  • 80 grams granulated sugar (for cooking the red beans)
  • 2 leaves pandan leaves
  • 3 tbsp sweetened condensed milk (for topping)
  • 8 pieces mini mochi (optional)
  • 2 tbsp chopped roasted peanuts (optional)

👩‍🍳 Instructions

  1. 1 Soak the red beans overnight in water, then drain. Simmer the red beans together with the pandan leaves in enough water until tender, about 45-60 minutes. Add the granulated sugar and cook for another 5 minutes, then set aside to cool.
  2. 2 Dissolve the gelatin powder in the cooled boiled water, stir well, and let sit for 5 minutes until it blooms.
  3. 3 Heat the milk, sweetened condensed milk, and granulated sugar in a saucepan over low heat, stirring until the sugar dissolves. Do not let it boil.
  4. 4 Turn off the heat and pour the bloomed gelatin into the hot milk mixture, stirring quickly until fully combined and the gelatin is completely dissolved.
  5. 5 Pour the milk mixture into a metal square baking pan (not plastic, for smoother shaved results). Let it cool to room temperature, then freeze for at least 6 hours or overnight until solid.
  6. 6 Once frozen, remove the milk ice block from the freezer. Shave it using a shaved ice machine until it forms soft, fine ribbons of ice.
  7. 7 Arrange the shaved milk ice in a serving bowl, mounding it into a small hill, then top with the sweet red beans.
  8. 8 Drizzle with sweetened condensed milk, then add mini mochi and a sprinkle of chopped peanuts to taste. Serve immediately while cold.

💡 Tips

• Use a metal container when freezing the milk mixture for a smoother, softer shaved texture—plastic containers tend to result in a coarser texture.

• If you don't have a shaved ice machine, use a food processor instead, pulsing the frozen block a little at a time to keep the texture fine.

• The red beans can be swapped for mashed boiled taro for an equally delicious flavor variation.

• Serve right after shaving, as this ice melts quickly at room temperature.
