Fattoush, a fresh salad from the Levant (Lebanon-Syria) with crispy pita bread! Fresh vegetables like tomatoes, cucumbers, and radishes are tossed with crunchy fried pita bread pieces, then drizzled with a refreshing sumac-lemon dressing. A light and refreshing dish.

  • 2 pita bread, cut into squares and fried or baked until crispy
  • 3 ripe tomatoes, diced
  • 2 cucumbers, cut into half-moons
  • 1 red bell pepper, diced
  • 5 radishes, thinly sliced
  • 4 stalks green onions, sliced
  • A handful of fresh parsley leaves
  • A handful of fresh mint leaves
  • 3 tbsp Dressing: extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp ground sumac
  • 1 clove garlic, grated
  • to taste Salt and black pepper
  • 1/2 tsp granulated sugar

👩‍🍳 Instructions

  1. 1 Cut the pita bread into small squares or triangles
  2. 2 Fry in oil or bake in the oven until completely crispy and golden
  3. 3 Set aside
  4. 4 Combine all the dressing ingredients and whisk until well mixed
  5. 5 Cut and prepare all the vegetables
  6. 6 Place all the vegetables and herbs in a large bowl
  7. 7 Add the crispy pita bread
  8. 8 Pour over the dressing and sprinkle extra sumac on top
  9. 9 Toss gently and serve immediately so the pita stays crispy

💡 Tips

• Sumac is the soul of fattoush — it gives a fruity tartness that can't be replaced

• Add the pita bread RIGHT before serving so it stays crispy

• You can add crumbled feta cheese for a richer variation
