- 200 grams medjool dates, pitted
- 60 grams unsweetened dried shredded coconut, toasted

- 1 Soak the dates in warm water for 10 minutes to soften them and make them easier to blend, then drain.
- 2 Toast the shredded coconut in a dry skillet over low heat for 3-4 minutes, stirring constantly, until light golden brown and fragrant. Remove and set aside.
- 3 Put the almonds and cashews into a food processor and process for 20-30 seconds until they form coarse, sand-like crumbs — be careful not to over-process into a paste.
- 4 Add the soaked dates, toasted coconut (reserving a little for the coating), chia seeds, ground cinnamon, and salt to the food processor.
- 5 Process all the ingredients for 1-2 minutes until the mixture is well combined, sticky, and can be shaped, pausing occasionally to scrape down the sides of the bowl for even mixing.
- 6 Check the texture by taking a small amount and rolling it in your palm; if it's still crumbly and won't hold together, add another 1 tsp of warm water at a time.
- 7 Scoop out about 1 heaping tbsp of the mixture and roll it between your palms until firm and neat; repeat until all the mixture is used (this should make about 16-18 balls).
