  • 300 grams Rolled oats (coarse instant oatmeal)
  • 75 grams Almonds, roughly chopped
  • 50 grams Cashews, roughly chopped
  • 30 grams Sunflower seeds
  • 40 grams Desiccated coconut
  • 120 ml Honey
  • 60 ml Coconut oil or neutral vegetable oil
  • 2 tbsp Brown sugar/palm sugar, finely grated
  • 1 tsp Ground cinnamon
  • 1/4 tsp Fine salt
  • 1 tsp Vanilla extract
  • 80 grams Raisins or chopped dried fruit (cranberries/dates)

👩‍🍳 Instructions

  1. 1 Preheat the oven to 300°F (150°C) for 10 minutes. Prepare a large flat baking sheet and line it with parchment paper.
  2. 2 In a large bowl, combine the oats, chopped almonds, chopped cashews, sunflower seeds, and desiccated coconut. Mix well.
  3. 3 In a small saucepan, heat the honey, coconut oil, and grated brown sugar over low heat, stirring, until the sugar dissolves and the mixture becomes a smooth liquid, about 2-3 minutes. Don't let it boil for too long.
  4. 4 Remove from heat, then add the ground cinnamon, salt, and vanilla extract to the honey mixture and stir well.
  5. 5 Pour the hot honey mixture into the bowl with the oats and nuts. Stir with a spatula until all the dry ingredients are evenly coated with the honey mixture.
  6. 6 Pour the granola mixture onto the prepared baking sheet and spread it out evenly. Press down lightly with a spatula so it's compact and will later form crunchy clusters.
  7. 7 Bake for 25-30 minutes, gently stirring or flipping the granola every 10 minutes so it cooks evenly and doesn't burn around the edges.
  8. 8 Once golden brown and fragrant, remove from the oven. Let the granola cool completely on the baking sheet without stirring so it forms crunchy clusters.
  9. 9 Once completely cool, mix in the raisins or chopped dried fruit. Stir gently so the clusters don't break apart.
  10. 10 Store the granola in an airtight jar. Serve with milk, yogurt, or eat it straight as a snack.

💡 Tips

• Avoid stirring too often during the last 10 minutes of baking so the granola forms crunchy clusters; just flip it occasionally.

• Make sure the granola is completely cool before storing it in a jar so it doesn't get soggy and stays crunchy longer.

• For a healthier version, reduce the amount of honey or replace part of it with maple syrup, and use extra virgin coconut oil.

• Add the dried fruit after the granola has cooled, not before baking, so it doesn't turn hard and burnt.
