- 1 Boil the chicken eggs for 10 minutes until cooked through, peel off the shells, then fry briefly until the surface is slightly wrinkled so the seasoning can soak in better. Set aside.
- 2 Peel the potatoes, cut into medium-sized pieces, then fry until half-cooked so they don't fall apart when cooked in the broth. Set aside.
- 3 Blend the shallots, garlic, curly red chilies, bird's eye chilies, candlenuts, turmeric, and ginger using a blender or mortar and pestle until completely smooth.
- 4 Heat the cooking oil in a wok or pot, then sauté the ground spice paste together with the bay leaves, kaffir lime leaves, lemongrass, and galangal until fragrant and cooked through, about 5-7 minutes over medium heat.
- 5 Pour in the coconut milk little by little while stirring continuously to prevent it from separating. Cook over low heat until it comes to a boil.
- 6 Add the ground coriander, palm sugar, and salt. Stir well and adjust the seasoning to taste.
- 7 Add the fried potatoes into the coconut broth, cook over low heat until the potatoes are tender, about 10-15 minutes.
