Gülüt Keki is a soft, fragrant Turkish spiced cake infused with cinnamon and cloves, with a touch of honey that makes it irresistible. It has a dense yet moist texture thanks to the combination of butter and milk, making it the perfect companion for afternoon tea or black coffee. A topping of walnuts adds a delightful crunch to every bite.

  • 300 grams All-purpose flour (medium-protein)
  • 150 grams Unsalted butter, melted
  • 150 grams Granulated sugar
  • 3 tbsp Honey
  • 3 Eggs
  • 150 ml Full-cream milk
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground cloves
  • 50 grams Chopped walnuts
  • 30 grams Whole walnuts, for topping
  • 1/4 tsp Salt
  • 1 tsp Vanilla powder

👩‍🍳 Instructions

  1. 1 Preheat the oven to 350°F (175°C). Grease a 20 cm (8-inch) round baking pan with butter and line the bottom with parchment paper.
  2. 2 In a large bowl, beat the eggs and sugar with a mixer on medium speed until fluffy and pale in color, about 3-4 minutes.
  3. 3 Pour the melted butter and honey into the egg mixture, then stir with a spatula until fully combined.
  4. 4 In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, cloves, salt, and vanilla powder, then mix well.
  5. 5 Gradually add the flour mixture to the egg mixture, alternating with the milk. Fold gently until the batter is smooth and free of lumps.
  6. 6 Add the chopped walnuts to the batter and stir briefly just until evenly distributed.
  7. 7 Pour the batter into the prepared pan and smooth the surface with a spatula.
  8. 8 Sprinkle the whole walnuts on top of the batter as a garnish before baking.
  9. 9 Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. 10 Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. 11 Slice the cake once it's completely cool for neat pieces, and serve with a dusting of powdered sugar if desired.

💡 Tips

• Make sure the melted butter is at room temperature before mixing it into the egg mixture to prevent clumping.

• Don't overmix the batter once the flour is added so the cake stays soft and doesn't turn dense.

• For a richer aroma, lightly toast the walnuts before adding them to the batter.

• Store the cake in an airtight container — it actually tastes even better the next day as the spices have more time to infuse.
