- 1 Beat the butter and margarine with a mixer on medium speed for about 2 minutes until soft and pale; don't over-whip.
- 2 Add the egg yolks one at a time, beating continuously until well combined.
- 3 Add the grated Edam and cheddar cheese, then mix well with a spatula.
- 4 Sift the flour, cornstarch, and salt together, then gradually fold into the butter mixture. Mix with a spatula until it forms a dough that can be shaped; don't overmix so the cookies stay crispy.
- 5 Wrap the dough in plastic wrap and chill in the refrigerator for 20-30 minutes to make it easier to shape and prevent spreading during baking.
