Karedok Sunda — a fresh raw vegetable salad drizzled with spicy peanut sauce. Unlike lotek, the vegetables here aren't boiled. Healthy, fresh, and totally addictive!

  • 100g long beans, cut into 2cm pieces
  • 100g cucumber, thinly sliced
  • 100g cabbage, thinly shredded
  • 100g raw bean sprouts
  • 50g Thai basil leaves
  • 2 pieces raw eggplant (for salad), thinly sliced
  • Karedok seasoning: fried peanuts, 100g
  • 5 pieces bird's eye chilies
  • 3 clove garlic
  • 1 inch piece kencur (aromatic ginger)
  • 2 tbsp palm sugar
  • 1 tsp salt
  • 1 tbsp tamarind water
  • 100 ml boiled water (cooled)
  • 1 tbsp toasted dried shrimp (ebi) (optional)

👩‍🍳 Instructions

  1. 1 Wash all the vegetables thoroughly and drain.
  2. 2 Grind the peanuts until smooth but still slightly coarse.
  3. 3 Add the bird's eye chilies, garlic, and kencur — grind again.
  4. 4 Add the palm sugar, salt, and tamarind water.
  5. 5 Pour in the water little by little while grinding until the seasoning reaches the right consistency.
  6. 6 Add the toasted dried shrimp if using, and grind briefly.
  7. 7 Arrange all the raw vegetables on a plate or mix them in a large bowl.
  8. 8 Drizzle with the karedok seasoning.
  9. 9 Toss well, or leave the seasoning on top as a topping.
  10. 10 Serve immediately so the vegetables stay fresh and crisp.

💡 Tips

• The key to a delicious karedok is the kencur — its distinctive aroma really makes it special

• All the vegetables should be fresh and washed thoroughly since they're eaten raw

• The karedok seasoning tastes better when ground with a mortar and pestle rather than blended, so the texture turns out just right
