- 250g low-protein all-purpose flour
- 150g cold butter
- 100g shredded edam cheese
- 50g shredded parmesan cheese
- 2 egg yolks
- 1/4 tsp salt
- 1/2 tsp baking powder
- to taste Topping: shredded edam cheese
- 1 yolk egg for brushing

👩🍳 Instructions
- 1 Mix the cold butter with both types of shredded cheese until well combined
- 2 Add the egg yolks one at a time
- 3 Sift the flour, baking powder, and salt, then add to the mixture
- 4 Mix until well combined and the dough can be shaped
- 5 Wrap the dough in plastic wrap and let it rest in the fridge for 30 minutes
- 6 Roll out the dough to about 0.5cm thick on a floured surface
- 7 Cut into rectangles about 1x4cm
- 8 Arrange on a baking sheet and brush with egg yolk
- 9 Sprinkle shredded cheese on top
- 10 Bake at 150°C (300°F) for 20-25 minutes until golden yellow
💡 Tips
• The butter must be cold so the dough is easy to shape
• The edam + parmesan combo makes the flavor more complex
• Don't roll the dough too thin, or the kastengel will turn out too hard
