- 1 Boil the water together with the palm sugar and pandan leaves until the sugar dissolves. Add the sweet potato and cassava.
- 2 Cook until half-tender (about 10 minutes). Add the kepok bananas and coconut milk. Cook over low heat, stirring gently and continuously so the coconut milk doesn't separate. Add the salt. Cook until all the fruit is tender and the broth has thickened slightly (about 15 minutes). Remove from heat.
- 3 Serve warm or cold.
💡 Tips
• Use kepok bananas that are still a bit green so they don't fall apart
• Stir in one direction with a wooden spoon
• The compote tastes even better if left to sit for 1 hour before serving so the flavors can soak in.
