- 250 grams medium-protein all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 300 ml full-cream milk
- 2 eggs, separated into whites and yolks
- 50 grams unsalted butter, melted
- 1 red or green apple, peeled and diced small
- 50 grams extra butter, for greasing the pan
- 3 tbsp powdered sugar, for dusting

- 1 Combine the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon in a large bowl. Whisk until well mixed.
- 2 In another bowl, whisk the egg yolks together with the milk and melted butter until fully combined.
- 3 Pour the milk mixture into the flour mixture little by little, stirring gently until the batter is smooth with no lumps. Don't overmix.
- 4 In a separate bowl, beat the egg whites with a mixer until stiff, forming soft peaks.
- 5 Gently fold the beaten egg whites into the batter using a spatula, folding from the bottom up so the air doesn't escape and the batter stays light.
- 6 Heat an æbleskiver pan (or a takoyaki or poffertjes pan) over medium heat. Grease each cavity with a little melted butter.
- 7 Pour the batter into each cavity until about 3/4 full. After a few seconds, add 2-3 diced apple pieces into the center of each one.
- 8 Cook for about 2-3 minutes until the bottoms are golden brown and the edges start to set. Use a skewer or small fork to gently rotate each ball 90 degrees.
- 9 Keep rotating the balls every 30-60 seconds until the entire surface is evenly golden brown and cooked through, about 6-8 minutes total per batch.
- 10 Remove the pancake balls and let them drain briefly on a wire rack. Repeat with the remaining batter until it's all used up.
- 11 Dust the warm æbleskiver with powdered sugar before serving.
💡 Tips
• If you don't have a special æbleskiver pan, you can use a takoyaki or poffertjes pan instead.
• Make sure the egg whites are beaten to soft peaks and folded in gently so the pancakes stay light and fluffy.
• Keep the heat at medium-low so the outside doesn't burn before the inside is fully cooked.
• Besides apple, you can also swap in blueberries or diced pear as the filling, depending on your preference.
