Dorayaki is a soft, fluffy Japanese pancake cake made famous by the Doraemon cartoon. It's made from two thin, soft sponge-like layers filled with sweet, rich red bean paste (anko). The texture is soft like fabric, slightly chewy at the edges, and makes the perfect companion for afternoon tea. This recipe uses ingredients that are easy to find in Indonesia, so you can make it at home without having to travel to Japan first.

  • 3 Eggs
  • 100 grams Granulated sugar
  • 2 tbsp Honey
  • 200 grams Medium-protein all-purpose flour
  • 1 tsp Baking powder
  • 3 tbsp Water
  • 2 tbsp Vegetable oil (for greasing the pan)
  • 250 grams Canned red kidney beans or boiled red kidney beans
  • 120 grams Granulated sugar (for the red bean paste)
  • 1/4 tsp Salt

  1. 1 Make the red bean paste first: mash the boiled red kidney beans using a blender or mortar and pestle until smooth, leaving a bit of texture if you like.
  2. 2 Cook the mashed red beans in a pan over low heat, add the sugar and salt, and stir continuously until the mixture thickens and can hold its shape, then remove from heat and let cool. Set aside.
  3. 3 For the dorayaki pancakes, whisk the eggs and sugar using a whisk or mixer until the sugar dissolves and the batter becomes slightly fluffy and pale in color.
  4. 4 Add the honey to the whisked eggs and mix well.
  5. 5 Sift the flour and baking powder, then fold into the egg mixture little by little, stirring gently with a spatula to avoid lumps.
  6. 6 Pour in the water little by little while stirring, until the batter becomes thick but still pourable (similar to pancake batter).
  7. 7 Let the batter rest for 15-20 minutes so the baking powder can activate and the cakes turn out softer.
  8. 8 Heat a flat non-stick pan over low heat, lightly grease it with oil, then wipe with a paper towel so the surface is thin and even.
