  • 200g roasted peanuts, coarsely crushed
  • 200g low-protein all-purpose flour
  • 100g powdered sugar
  • 100g margarine
  • 1 whole egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • Egg wash: 1 egg yolk + 1 tbsp milk

👩‍🍳 Instructions

  1. 1 Roast the peanuts, then coarsely crush them (don't let them turn into a paste)
  2. 2 Beat the margarine and powdered sugar together until well combined
  3. 3 Add the egg and vanilla, and mix well
  4. 4 Sift together the flour, baking powder, and salt
  5. 5 Mix into the batter along with the crushed peanuts
  6. 6 Stir until the dough can be shaped
  7. 7 Take a small portion of dough, roll into a ball, then flatten slightly
  8. 8 Arrange on a baking sheet, then press with a fork to make a pattern
  9. 9 Brush with the egg yolk and milk mixture
  10. 10 Bake in the oven at 160°C (320°F) for 20-25 minutes, until golden brown

💡 Tips

• Crush the peanuts coarsely so the cookies still have some texture

• You can swap the margarine for butter for a richer aroma

• The fork pattern isn't just pretty—it also helps the cookies bake evenly
