- 300g butter
- 200g powdered sugar
- 10 egg yolks
- 5 egg whites
- 150g low-protein all-purpose flour
- 50g powdered milk
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tbsp emulsifier (ovalet/TBM)
- 1 tsp vanilla extract

👩🍳 Instructions
- 1 Beat the butter and powdered sugar together until pale and fluffy
- 2 In a separate bowl, beat the eggs and emulsifier until thick and fluffy
- 3 Gradually fold the beaten egg mixture into the butter mixture
- 4 Sift together the flour, powdered milk, and all the ground spices
- 5 Add to the batter, gently folding until well combined
- 6 Grease a 20x20cm (8x8 inch) baking pan with butter and line with parchment paper
- 7 Preheat the oven to 180°C (350°F), using the top heating element
- 8 Pour 3-4 tbsp of batter into the pan and spread into a thin, even layer
- 9 Bake using the top heat until the surface turns golden brown, about 3-4 minutes
- 10 Brush melted butter over the top, then pour in another layer of batter
- 11 Repeat the process until all the batter is used (this may take 18-20 layers)
- 12 Once all layers are done, bake for a final 10 minutes using both top and bottom heat
- 13 Flip the cake while still warm, let it cool, then slice
💡 Tips
• Patience is key! Each layer must be fully golden brown before pouring in the next one
• Brush melted butter between layers to keep the cake moist
• Slice with a sharp knife dipped in hot water for clean, neat cuts
