Nastar is the most popular type of traditional cookie served during Lebaran (Eid) celebrations in Indonesia. The soft, buttery dough is filled with sweet and slightly tangy homemade pineapple jam. It's usually shaped into small rounds or ovals, with the surface brushed with egg yolk so it turns a glossy golden color after baking. Nastar isn't just delicious — it also symbolizes prosperity, since its shape resembles little gold coins. Making the pineapple jam is definitely the most time-consuming part, since it needs to be cooked for hours until it's dry enough to be shaped into balls. But the sweet-tangy pineapple jam creates a perfect contrast with the rich, buttery dough. During the holidays, a jar of nastar is always on hand in every household to serve to guests. - 1 Pineapple jam: squeeze the juice out of the grated pineapple, then cook the pulp with a little of the reserved juice (to taste). Add the sugar and cinnamon, and cook over low heat, stirring, until dry and firm enough to be rolled into balls. Dough: beat the butter, sugar, and egg yolks until light and fluffy. Mix the flour, cornstarch, and powdered milk together, then sift. Add to the butter mixture and stir just until combined — don't overmix. Shape the dough into small balls, flatten each one, fill with pineapple jam, then roll back into a ball. Arrange on a baking sheet and brush with egg yolk. Bake at 150°C (300°F) for 20-25 minutes, until golden.
💡 Tips
• The pineapple jam must be completely dry so it doesn't melt during baking
• Use real butter for a richer, more premium flavor
• Store the nastar in an airtight jar.
