Lapis legit kurma is a rich twist on the classic lapis legit (Indonesian spiced layer cake), made with date paste that keeps the texture extra moist and gives it a naturally deep sweetness without needing a lot of added sugar. The aroma of cinnamon, cardamom, and cloves blends perfectly with the sweetness of the dates, creating a luxurious layered cake that's perfect for Lebaran (Eid) celebrations or any special occasion.   • 250 grams pitted dates
  • 150 ml hot water
  • 500 grams good-quality unsalted butter
  • 250 grams margarine
  • 200 grams powdered sugar
  • 3 tbsp sweetened condensed milk (white)
  • 20 egg yolks
  • 5 egg whites
  • 100 grams low-protein all-purpose flour
  • 2 tbsp full-cream powdered milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp fine salt
  • 1 tsp vanilla powder

  1. 1 Soak the dates in hot water for 15 minutes until softened, then blend together with the soaking water until you get a smooth paste. Set aside and let cool.
  2. 2 Prepare a 20x20 cm (about 8x8 inch) square baking pan, lightly grease it with margarine, and line the bottom and sides with parchment paper.
  3. 3 Beat the butter, margarine, and powdered sugar with a mixer on medium speed for 8-10 minutes until pale, light, and fluffy. Add the condensed milk and mix briefly until well combined.
  4. 4 In a separate bowl, beat the egg yolks and egg whites together with the vanilla until thick and pale, forming ribbon-like trails when the beater is lifted, about 10 minutes, using a mixer on high speed.
  5. 5 Combine the flour, powdered milk, cinnamon, cardamom, cloves, nutmeg, and salt in one bowl, then sift to prevent lumps.
