The difference lies in the kencur (aromatic ginger) and palm sugar, which give lotek's sauce its own distinct character. The vegetables are boiled until just half-cooked so they still have a bit of crunch.

- 100g water spinach (kangkung), boiled
- 100g spinach (bayam), boiled
- 100g long beans, cut and boiled
- 100g cabbage, sliced and boiled
- 100g bean sprouts, boiled
- 1 piece cucumber, sliced
- 150g Sauce: fried peanuts
- 3 clove garlic
- 5 curly red chili peppers
- 2 inch piece kencur (aromatic ginger)
- 1 tbsp palm sugar, shaved
- 1 tsp salt
- 1 tsp shrimp paste (terasi), toasted
- 2 tbsp tamarind water
- 100ml water

👩🍳 Instructions
- 1 Boil the vegetables one at a time, separately — don't overcook them
- 2 Drain and arrange on a plate
- 3 For the sauce: coarsely grind the fried peanuts
- 4 Grind the garlic, chili peppers, kencur, and shrimp paste until smooth
- 5 Mix with the coarsely ground peanuts
- 6 Add the palm sugar, salt, and tamarind water
- 7 Pour in the water little by little while stirring
- 8 Pour the sauce over the vegetables
- 9 Mix well, or serve the sauce separately on top
💡 Tips
• Don't boil the vegetables too long — they should still have some texture
• Kencur and palm sugar are what set lotek apart from gado-gado
• Grinding the sauce by hand tastes better than blending — the coarse texture matters
• Tamarind water adds a refreshing tang that keeps the dish from feeling too heavy
