  • 100 grams sago pearls (small tapioca pearls)
  • 3 fruits ripe honey mangoes
  • 200 ml instant thick coconut milk
  • 150 ml full cream liquid milk
  • 4 tbsp granulated sugar
  • 800 ml drinking water
  • 1 leaf (optional) pandan leaf
  • ice cubes to taste, for serving

  1. 1 Boil the water together with the pandan leaf until it comes to a boil, then add the sago pearls. Cook while stirring occasionally so they don't stick to the bottom of the pot, for about 12-15 minutes until the sago pearls swell up and turn translucent.
  2. 2 Once cooked, turn off the heat, cover the pot, and let the sago sit for 10 minutes so the center cooks through completely and the texture becomes evenly chewy.
  3. 3 Drain the sago, then rinse under cold running water while gently rubbing it to prevent clumping and to remove the sliminess. Set aside.
  4. 4 Peel two of the mangoes and cut them into small cubes. Set aside the remaining mango and puree it using a blender or mash it with a fork until smooth.
  5. 5 Combine the thick coconut milk, liquid milk, granulated sugar, and mango puree in a large bowl. Stir until the sugar is completely dissolved, then taste and adjust the sweetness as needed.
