This marble cake has a special secret: the chocolate batter is made thicker than usual so that when baked, it forms beautiful cracks on the surface while keeping the inside soft and almost melt-in-your-mouth tender. The blend of fragrant vanilla and rich chocolate come together in a bite that's hard to stop eating. Perfect as your go-to treat for gatherings or guests since it already looks impressive without any extra decoration.

  • 150 grams margarine
  • 50 grams unsalted butter
  • 180 grams fine granulated sugar
  • 4 eggs
  • 200 grams low-protein all-purpose flour
  • 2 tbsp full cream milk powder
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 3 tbsp liquid milk
  • 1 tsp vanilla paste
  • 3 tbsp cocoa powder
  • 3 tbsp hot water
  • 50 grams, optional for a richer chocolate layer dark cooking chocolate, chopped

👩‍🍳 Instructions

  1. 1 Preheat the oven to 170°C (340°F). Grease a 20 cm (8-inch) round cake pan with margarine, then line the bottom with parchment paper.
  2. 2 Beat the margarine, butter, and fine granulated sugar with a mixer on medium speed until soft, pale, and fluffy, about 4-5 minutes.
  3. 3 Add the eggs one at a time while continuing to beat, making sure each egg is fully incorporated before adding the next so the batter doesn't curdle.
  4. 4 In a separate bowl, mix the flour, milk powder, baking powder, and salt, then sift to prevent lumps.
  5. 5 Gradually add the flour mixture into the butter batter while gently folding with a spatula, alternating with the liquid milk and vanilla paste. Mix until smooth and well combined; do not overmix.
  6. 6 Dissolve the cocoa powder in hot water until it forms a thick paste, then let it cool slightly.
  7. 7 Take about a third of the plain batter and mix it with the cocoa paste and chopped dark cooking chocolate if using, stirring until evenly combined to make the chocolate batter.
  8. 8 Pour the plain batter and chocolate batter alternately into the pan, then create a marble pattern by swirling the surface with a skewer or wooden stick in a circular motion.
  9. 9 Bake for 45-50 minutes, or until the surface is cracked and a toothpick inserted into the center comes out clean.
  10. 10 Remove from the oven and let the cake rest in the pan for 10 minutes before taking it out and placing it on a wire rack to cool completely before slicing.

💡 Tips

• Make sure the margarine and butter are at room temperature before beating so the batter rises to its fullest.

• Don't over-swirl the marble pattern—3-4 swirls are enough so the pattern doesn't turn entirely chocolate.

• Use good-quality cocoa powder for a richer chocolate color and flavor.

• Store the cake in an airtight container to keep it soft for up to 3 days.
