  • 80 grams granulated sugar
  • 250 ml water

  1. 1 Prepare the ice cream: use a small scoop to shape the ice cream into balls about 3 cm (1.2 inches) in diameter, place them on a baking sheet lined with parchment paper, then freeze again for at least 2-3 hours until completely firm.
  2. 2 While waiting for the ice cream to freeze, make the mochi skin. Combine the glutinous rice flour, sugar, and salt in a heat-resistant bowl, and mix well.
  3. 3 Pour in the water little by little while stirring until the batter is smooth and free of lumps. If you'd like a colorful version, divide the batter and add food coloring to taste.
  4. 4 Steam the batter for 20-25 minutes over medium heat until cooked through, turning translucent and chewy.
