- 3 plates Cold cooked white rice (day-old rice works best)
- 3 tbsp Dried shrimp (ebi), soaked in hot water then drained
- 2 Chicken eggs
- 5 pieces Curly red chilies
- 5 pieces Red bird's eye chilies (adjust to taste for spiciness)
- 6 cloves Shallots
- 3 cloves Garlic
- 1 tsp Toasted shrimp paste (terasi bakar)
- 2 tbsp Sweet soy sauce (kecap manis)
- 1/2 tsp Salt
- 1/2 tsp Granulated sugar
- 1/2 tsp Chicken bouillon powder (optional)
- 4 tbsp Cooking oil
- 2 stalks Scallions, thinly sliced
- 2 tbsp Fried shallots for garnish
- 1 piece Fresh cucumber for serving, sliced
- to taste Shrimp crackers (kerupuk udang) for serving

- 1 Prepare cold cooked white rice (ideally leftover rice stored in the fridge overnight) so the fried rice doesn't turn out mushy and clumpy.
- 2 Soak the dried shrimp (ebi) in hot water for 10 minutes until softened, then drain. Set aside a portion for garnish and use the rest for the seasoning paste.
- 3 Blend the shallots, garlic, curly red chilies, bird's eye chilies, toasted shrimp paste, and a portion of the soaked dried shrimp using a blender or mortar and pestle until you get a smooth paste.
- 4 Heat the cooking oil in a large skillet or nonstick pan over medium heat.
- 5 Beat the eggs, pour them into the hot pan, and scramble until half-cooked, then push to the side of the pan.
- 6 Sauté the spice paste in the same pan until fragrant and its color darkens, about 3-4 minutes over medium heat, so the paste is fully cooked and loses its raw smell.
- 7 Add the remaining soaked dried shrimp and stir well with the spice paste until fragrant.
- 8 Add the cold white rice, stir quickly, and spread the seasoning evenly through the rice using a spatula, pressing gently so the flavors are fully absorbed.
- 9 Add the sweet soy sauce, salt, sugar, and bouillon powder, then mix well until the rice turns an even light brown color.
- 10 Mix in the scrambled eggs set aside earlier, stirring until well combined.
- 11 Add the sliced scallions, stir briefly, then turn off the heat.
- 12 Transfer the fried rice to a serving plate, and sprinkle with fried shallots and the remaining dried shrimp on top.
- 13 Serve warm with fresh cucumber slices and shrimp crackers on the side.

• Use cold or day-old rice so the fried rice doesn't turn mushy and separates easily when fried.
• Toast the shrimp paste briefly over low heat or wrap it in foil and roast it, to remove the raw smell and bring out its savory aroma.
• Don't soak the dried shrimp for too long so it stays slightly chewy instead of soft, since this is what gives this dish its signature texture.
• For a richer version, add fresh shrimp pieces or shredded chicken while sautéing the spice paste before adding the rice.
