- 3 plates cold cooked white rice (day-old rice)
- 150 grams fresh shrimp, peeled
- 100 grams fresh squid, cut into rings
- 5 pieces fish balls, thinly sliced
- 2 chicken eggs
- 4 cloves garlic, finely minced
- 5 shallots, finely minced
- 3 tbsp oyster sauce
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp salty soy sauce
- 1 tbsp tomato ketchup
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 tsp granulated sugar
- 2 stalks scallions, thinly sliced
- 1/2 carrot, cut into small cubes
- 3 tbsp cooking oil for sautéing
- 1/2 cucumber, for serving
- 1 tomato, for serving
- to taste shrimp crackers (kerupuk udang)

- 1 Prepare cold cooked white rice (ideally day-old rice that's been stored in the fridge overnight) so it doesn't turn mushy when fried. Break up any clumped rice grains with your hands or a fork.
- 2 Wash the shrimp and squid thoroughly, then drain. Set aside along with the sliced fish balls.
- 3 Heat cooking oil in a skillet or non-stick pan over medium heat. Add the minced garlic and shallots, and sauté until fragrant and lightly golden.
- 4 Add the shrimp and squid, stirring quickly for 1-2 minutes until they change color and are half cooked. Don't overcook, so the seafood stays tender.
- 5 Push the sautéed seafood to the side of the pan, then crack the eggs into the center. Scramble the eggs until half cooked, then mix them together with the seafood.
- 6 Add the carrot and fish balls, stir well, and cook briefly until the carrot softens slightly.
- 7 Add the cold cooked rice, stirring and folding it with the seasoning using a bottom-to-top flipping technique so the rice mixes evenly.
- 8 Pour in the oyster sauce, sweet soy sauce, salty soy sauce, and tomato ketchup. Keep stirring until all the seasonings are absorbed and the rice turns evenly brown.
- 9 Add the salt, sugar, and ground pepper. Adjust the seasoning to taste, then stir again until well combined.
- 10 Add the sliced scallions, stir for about 30 seconds, then turn off the heat so the scallions stay fresh and don't wilt too much.
- 11 Serve the seafood fried rice while warm, garnished with sliced cucumber, fresh tomato, and shrimp crackers on the side.
💡 Tips
• Use cold or day-old rice since its texture is firmer and won't turn mushy when fried.
• Cook the seafood over high heat for a short time so it stays tender and juicy instead of becoming rubbery.
• If you like it spicy, add sliced bird's eye chilies when sautéing the garlic and shallots at the start.
• Make sure your skillet or non-stick pan is really hot before adding the ingredients so the fried rice doesn't stick and cooks evenly.
