A practical favorite lunchbox treat for kids that's easy to eat with your hands! Soft, sticky rice is shaped into triangles, filled with savory-sweet soy sauce shredded chicken, then wrapped in nori. Perfect for school lunches that don't need reheating. One container of 4-5 rice balls can be prepped the night before and just popped into the lunchbox in the morning.

  • warm white rice (slightly sticky)
  • nori, cut into 3cm strips
  • Shredded chicken filling: 150g chicken breast, boiled then finely shredded
  • sweet soy sauce (kecap manis)
  • sesame oil
  • garlic, finely minced
  • sugar
  • A pinch of salt
  • oil for sautéing
  • Toasted sesame seeds, to taste

👩‍🍳 Instructions

  1. 1 Sauté the garlic until fragrant
  2. 2 Add the shredded chicken, sweet soy sauce, sesame oil, sugar, and salt
  3. 3 Stir well and cook for 3 minutes until the seasoning is absorbed, then remove from heat and set aside
  4. 4 Take a handful of rice and flatten it in your palm (wet your hands with salted water so it doesn't stick)
  5. 5 Place 1 tbsp of shredded chicken in the center
  6. 6 Cover with more rice, then shape into a triangle using both hands
  7. 7 Press gently to make it firm, but not too hard
  8. 8 Attach a strip of nori to the bottom of the triangle
  9. 9 Sprinkle sesame seeds on top
  10. 10 Repeat until the rice is used up — makes about 4-5 rice balls

💡 Tips

• Use rice that's slightly sticky (not dry/fluffy) so it holds its shape and doesn't fall apart

• Wet your hands with water and a bit of salt each time you shape a ball — it prevents sticking and adds extra flavor

• You can swap the filling for tuna mayo, salmon, or shredded meat (abon) for variety

• Wrap each rice ball individually in cling wrap to keep its shape neat in the lunchbox
