  • 400g rice, rinsed clean
  • 400ml thick coconut milk
  • 200ml water
  • 2 leaves bay leaves
  • 2 stalks lemongrass stalks, bruised
  • 3 inch piece galangal, bruised
  • 2 tsp salt
  • To serve: fried jambal roti salted fish
  • sambal terasi (shrimp paste chili sauce)
  • fresh raw veggies (cucumber, Thai basil, cabbage)
  • fried tofu and tempeh

👩‍🍳 Instructions

  1. 1 Put the rice into a pot or rice cooker
  2. 2 Pour in the coconut milk and water
  3. 3 Add the bay leaves, lemongrass, galangal, and salt
  4. 4 Stir well
  5. 5 Cook as you would regular rice
  6. 6 If using a pot: cook over high heat until the water is absorbed, then lower the heat and cover tightly for 20 minutes
  7. 7 If using a rice cooker: cook as usual, then let it sit for 10 minutes once done
  8. 8 Gently fluff the rice with a fork so it stays light and fluffy
  9. 9 Serve with fried salted fish, sambal terasi, fresh raw veggies, and fried tofu and tempeh

• Use good-quality, sticky rice for the best results
