- 3 kaffir lime leaves, center vein removed, finely sliced
- 2 tbsp lime juice
- 2 tbsp warm coconut oil
- 1 tsp salt
- 1/2 tsp sugar

- 1 Poach the chicken breast with the bay leaves, lemongrass, and salt until cooked through, about 20 minutes.
- 2 Remove from the pot, let cool, then shred into strips.
- 3 For the sambal matah: thinly slice all the ingredients — shallots, lemongrass, bird's eye chilies, and kaffir lime leaves.
- 4 Combine all the sliced ingredients in a bowl.
- 5 Add the lime juice, salt, and sugar.
- 6 Pour the warm coconut oil over the mixture and stir well.
- 7 Arrange the red rice on a plate or in a meal-prep container.
- 8 Top with the shredded chicken.
- 9 Add the sambal matah on top.
- 10 Add cucumber and tomato on the side if you like.
