👩🍳 Instructions
- 1 Grill the oncom over low heat, or roast it with a little oil, until the surface is dry and fragrant, then set aside to cool slightly.
- 2 Grind the shallots, garlic, red chilies, bird's eye chilies, kencur, shrimp paste, and salt using a mortar and pestle or a blender until roughly combined.
- 3 Heat the oil in a skillet, then sauté the ground spice paste together with the bay leaves until fragrant and cooked through, about 3-4 minutes.
- 4 Add the grilled oncom to the sautéed spices, crumble it with a spatula while stirring until evenly mixed and the seasoning is fully absorbed.
- 5 Add the shaved palm sugar, stir again until evenly mixed and cooked, taste, and adjust the salt if needed.
- 6 Add the basil leaves, stir briefly until wilted, then turn off the heat.
- 7 Mix the warm rice into the skillet with the seasoned oncom, stir and gently mash (ditutug) until the oncom is evenly combined with the rice.
- 8 Serve the nasi tutug oncom while still warm with side dishes such as fried chicken, fried tempeh/tofu, salted fish, and fresh raw vegetables.
💡 Tips
• Choose fresh black oncom that doesn't smell sour so your dish turns out more fragrant and savory.
• Grilling the oncom before cooking adds a distinctive smoky aroma, so don't skip this step.
• Adjust the amount of bird's eye chilies to your taste; for a spicier version, you can add green bird's eye chilies.
• Nasi tutug oncom is best enjoyed piping hot with free-range fried chicken and fresh sambal dadak (fresh chili sauce).
