  • 200 grams Marie or digestive biscuits
  • 100 grams margarine, melted
  • 400 grams cream cheese, room temperature
  • 100 grams powdered sugar
  • 2 tbsp good-quality matcha powder
  • 100 ml full-cream liquid milk
  • 250 ml liquid whipping cream, whipped to stiff peaks
  • 10 grams gelatin powder (plant-based/agar or beef gelatin)
  • 50 ml boiled water, to dissolve the gelatin
  • 150 grams sweetened canned red beans (anko), reserve some for topping
  • 1 tbsp extra matcha-water mixture for the top layer (optional)

  1. 1 Crush the biscuits until fine using a food processor, or place them in a plastic bag and crush with a bottle. Mix with the melted margarine until the texture resembles wet sand.
  2. 2 Pour the biscuit mixture into the bottom of a 7-8 inch (18-20 cm) springform pan lined with parchment paper. Press down firmly and evenly using the back of a spoon or a glass. Keep it in the fridge while you prepare the next steps.
  3. 3 Dissolve the gelatin powder in the boiled water, stir well, then heat briefly over low heat or in the microwave for 15-20 seconds until fully liquid with no lumps. Set aside until lukewarm.
  4. 4 Beat the cream cheese and powdered sugar with a mixer on medium speed until smooth, soft, and free of lumps, about 2-3 minutes.
  5. 5 Dissolve the matcha powder in the warm milk, stirring until no lumps remain, then pour it into the cream cheese mixture. Beat again until the green color is evenly mixed in.
  6. 6 Add the dissolved gelatin into the matcha cream cheese mixture while continuing to beat slowly so it blends in completely.
