- 1 The night before: combine the rolled oats, chia seeds, almond milk, yogurt, honey, vanilla, and salt
- 2 Stir well until everything is fully combined
- 3 Pour into a mason jar or a container with a lid
- 4 Cover and refrigerate overnight, for at least 6 hours
- 5 In the morning: take it out of the fridge and give it a quick stir
- 6 If it's too thick, add a splash of almond milk
- 7 Arrange the toppings: layer the berries on top and sprinkle with granola
- 8 Add the pumpkin seeds, then drizzle with almond butter and honey
- 9 Garnish with mint leaves
- 10 Serve cold, straight from the fridge
💡 Tips
• Chia seeds swell and absorb liquid overnight — don't reduce the amount, since this is what gives the creamy texture
