  • 300 grams fusilli or penne pasta
  • 200 grams broccoli, cut into florets
  • 4 links chicken sausage, sliced diagonally
  • 1/2 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 3 tbsp butter or margarine
  • 3 tbsp all-purpose flour
  • 500 ml whole milk
  • 150 grams shredded cheddar cheese
  • 100 grams shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground nutmeg
  • 1 tsp chicken bouillon powder
  • 2 tbsp vegetable oil for sautéing
  • 1 tbsp chopped parsley for garnish (optional)

  1. 1 Boil the pasta in lightly salted boiling water according to the package instructions until al dente (usually 8-10 minutes). Leave it slightly firmer than usual since it will be baked again later. Drain and set aside.
  2. 2 During the last 2 minutes of boiling the pasta, add the broccoli florets to the same pot so they soften slightly but stay crisp. Remove and drain together with the pasta.
  3. 3 Heat the vegetable oil in a skillet, and sauté the onion and garlic until fragrant and softened. Add the chicken sausage and sauté briefly until lightly browned. Remove from heat and set aside.
  4. 4 In another saucepan, melt the butter over low heat. Add the flour and whisk quickly for 1 minute until it forms a thick paste (roux) with no lumps.
  5. 5 Pour in the milk little by little while continuously whisking to prevent lumps. Cook over low-medium heat, stirring constantly, until thickened, about 5-7 minutes.
