  • 300 grams fresh shrimp, peeled with tails left on
  • 5 ripe red tomatoes, roughly chopped

  • 1/2 onion, finely minced
  • 2 tbsp tomato paste
  • 3 red bird's eye chilies, sliced (optional, to taste)
  • 5 tbsp olive oil
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 3 leaves fresh basil leaves or parsley, chopped
  • 3 tbsp grated parmesan cheese
  • 100 ml pasta cooking water
  • 1 tsp lemon juice

  3. 3 Add the sliced bird's eye chilies (if using), then stir in the chopped tomatoes and tomato paste. Mix well and cook over low-medium heat for 8-10 minutes, stirring occasionally, until the tomatoes soften and the sauce thickens.
