- 300g straw mushrooms (halved)
- 5 Spice paste: shallots
- 3 clove garlic
- 5 curly red chilies
- 2 inch piece turmeric
- 1 inch piece ginger
- 1 tsp ground coriander
- 1 tsp salt
- 1/2 tsp sugar
- 2 Aromatics: lemongrass stalks, sliced
- Thai basil
- 2 leaves bay leaves
- 3 leaves kaffir lime leaves
- Banana leaves
- Toothpicks (or bamboo skewers)

- 1 Cut the straw mushrooms in half and wash thoroughly.
- 2 Blend all the spice paste ingredients until smooth.
- 3 Mix the mushrooms with the spice paste, stirring until evenly coated.
- 4 Let it sit for 15 minutes so the seasoning can soak in.
- 5 Prepare a piece of banana leaf and place the mushroom mixture on top.
- 6 Add the lemongrass, Thai basil, bay leaves, and kaffir lime leaves.
- 7 Wrap tightly and secure with a toothpick or bamboo skewer.
- 8 Steam for 25 minutes until cooked through.
- 9 Remove from the steamer; you can briefly grill it on a nonstick pan for extra aroma.
- 10 Serve with steamed white rice.
💡 Tips
• Straw mushrooms work better than button mushrooms for pepes — they have a chewier texture
• Don't rinse the mushrooms too long so they don't soak up excess water
• Use a generous amount of spice paste since the mushrooms will absorb a lot of the seasoning
• Thai basil makes the pepes aroma even more fragrant
