  • 60g rolled oats
  • 1 ripe banana
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • A little coconut oil for cooking
  • Topping: honey or maple syrup
  • Sliced banana
  • Blueberries
  • Greek yogurt
  • Sliced almonds

  1. 1 Blend the oats until they form a coarse flour
  2. 2 Add the banana, eggs, baking powder, and cinnamon
  3. 3 Blend until smooth
  4. 4 Let the batter rest for 5 minutes so the oats can absorb the liquid
  5. 5 Heat a nonstick skillet with a little coconut oil over low heat
  6. 6 Pour about 2-3 tbsp of batter per pancake
  7. 7 Cook until bubbles appear on the surface, about 2-3 minutes
  8. 8 Flip and cook the other side for 1-2 minutes
  9. 9 Repeat until the batter is used up — makes about 6 pancakes
