👩🍳 Instructions
- 1 Mango layer: Combine the mango puree, agar-agar, water, sugar, salt, and lime juice — cook until it comes to a boil
- 2 Pour half of the mixture into the bottom of the mold, add mango chunks, and let it set halfway
- 3 Clear layer: Boil water, agar-agar, and sugar until it comes to a boil
- 4 Pour over the half-set mango layer, then add more mango chunks
- 5 Let it sit until set, then pour the remaining mango layer on top (reheat first if it has hardened)
- 6 Chill in the refrigerator for at least 4 hours
- 7 Serve cold with fresh mango chunks
💡 Tips
• Use mangoes that are truly ripe and sweet for the best results
• Don't add too much sugar since the mango is already naturally sweet
• Make sure each layer has set before adding the next so the layers don't mix together
