👩🍳 Instructions
- 1 Blend the fresh strawberries with water until smooth, then strain to remove the seeds. Set this strawberry puree aside.
- 2 In a saucepan, combine 1 packet of agar-agar (7 grams) with the liquid milk, 70 grams of granulated sugar, and the salt. Stir well before turning on the heat.
- 3 Cook the milk mixture over medium heat, stirring continuously, until it comes to a boil and forms slight bubbles around the edges, about 5-7 minutes. Turn off the heat, then add the plain yogurt and heavy cream, stirring quickly until smooth and well combined.
- 4 In a separate saucepan, combine the remaining 1 packet of agar-agar (7 grams) with the strawberry puree and the remaining 50 grams of granulated sugar. Cook over medium heat, stirring, until it comes to a boil, about 5 minutes. Add food coloring if you'd like a deeper color, stir well, then turn off the heat.
- 5 Prepare a pudding mold or a square baking pan. Pour the milk-yogurt mixture and the strawberry mixture in alternating spoonfuls into the mold to create a marbled effect.
- 6 Use a skewer or a thin stick to gently swirl the surface of the pudding into a beautiful marbled pattern; don't overmix, or the pattern will disappear.
- 7 Let the pudding sit at room temperature until the steam has dissipated, about 15 minutes, then refrigerate for at least 3 hours until fully set and firm.
- 8 Carefully remove the pudding from the mold, cut into pieces as desired, and garnish with fresh strawberry slices on top before serving chilled.
💡 Tips
• Make sure to strain the strawberries thoroughly so the pudding stays smooth without any bothersome seeds.
• Don't swirl the marbled pattern for too long, or the two mixtures will blend together and the pretty pattern will be lost.
• Use strawberries that are fully ripe and sweet so their tartness balances nicely with the sugar's sweetness.
• This pudding can be stored in the refrigerator for up to 3 days in a tightly sealed container.
