Bannock is a traditional bread from rural Canadian and Scottish communities, made without yeast and relying simply on baking powder, so it can be baked or pan-fried in a short amount of time. Its texture is dense yet soft on the inside, with a slightly crisp, golden exterior—perfect served warm with butter or honey.   • 500 grams All-purpose flour
  • 3 tbsp Baking powder
  • 1 tsp Salt
  • 2 tbsp Granulated sugar
  • 60 grams Cold unsalted butter, cubed
  • 300 ml Plain milk
  • 2 tbsp Vegetable oil for greasing the pan

  1. 1 Mix the flour, baking powder, salt, and sugar together in a large bowl, stirring well with a whisk.
  2. 2 Add the cold cubed butter to the flour mixture and rub it in with your fingertips until the mixture becomes coarse and crumbly, like breadcrumbs.
  3. 3 Pour in the milk a little at a time while stirring with a wooden spoon until the dough comes together into a soft mass. Don't overmix, so the bread stays tender.
  4. 4 Dust the countertop with a little flour, turn out the dough, and knead gently for just 1-2 minutes until smooth and no longer sticky.
  5. 5 Shape the dough into a flat round about 3 cm (1¼ inches) thick and roughly 20 cm (8 inches) in diameter.
  6. 6 Heat a nonstick or Teflon-coated skillet over low heat and lightly grease it with vegetable oil.
  7. 7 Cook the bannock in the skillet over low heat for 12-15 minutes on one side until the bottom turns golden brown; cover the pan so the inside cooks evenly.
  8. 8 Carefully flip the bread using a wide spatula and cook the other side for another 10-12 minutes until fully cooked through and it sounds hollow when tapped.

💡 Tips

• Use butter that's truly cold, and don't knead the dough too long, so the bread stays tender and doesn't turn tough.

• If you don't have a large nonstick skillet, bannock can also be baked in the oven at 350°F (180°C) for 20-25 minutes.

• For a flavor variation, add raisins, nuts, or shredded cheese to the dough before shaping.

• Keep the heat low while pan-cooking so the inside cooks through fully before the outside burns.
