- 1 Combine the flour, instant yeast, sugar, and salt in a large bowl, and mix well with a whisk or wooden spoon.
- 2 Make a well in the center of the dry mixture, then pour in the warm water little by little while stirring until the dough starts to come together.
- 3 Add the olive oil, then knead the dough for 8-10 minutes until smooth and elastic and no longer sticky to the touch.
- 4 Shape the dough into a ball, place it in a bowl lightly greased with oil, cover with a damp cloth or plastic wrap, and let it rest for 1 hour until doubled in size.
- 5 Punch down the dough, divide it into 8 equal portions, shape each into a ball, then let them rest again for 10 minutes to relax.
- 6 Dust the work surface with a little flour, then roll out each dough ball into a flat circle about 0.2 inch (0.5 cm) thick and 6-7 inches (15-18 cm) in diameter.
- 7 Heat a nonstick flat skillet or griddle without oil over high heat until it's very hot—this is the key to getting the pita to puff up.
- 8 Place one flattened dough round onto the hot skillet and cook for 1-2 minutes until large bubbles appear and the bottom starts to turn golden brown, then flip.
- 9 Cook the other side for 1-2 minutes until the bread puffs up and forms an air pocket in the middle; remove and cover with a clean cloth to keep it moist.
- 10 Repeat the cooking process with the remaining dough, then serve the warm pita bread with hummus, kebabs, or your favorite fillings.
