  • 300 grams fresh medium-sized shrimp
  • 1 large fruit green mango, peeled and coarsely shredded
  • 1 piece carrot, coarsely shredded
  • 1 piece cucumber, seeds removed and thinly sliced
  • 3 cloves shallots, thinly sliced
  • 3-5 pieces red bird's eye chilies, sliced on the diagonal
  • 1 handful Thai basil leaves, picked
  • 3 tbsp fried peanuts, coarsely chopped
  • 2 tbsp fried shallots, for garnish
  • 3 pieces limes, juiced
  • 3 tbsp palm sugar, finely shaved
  • 2 tbsp halal fish sauce
  • 1/2 tsp salt
  • 2 tbsp cooled boiled water

👩‍🍳 Instructions

  1. 1 Boil the shrimp in lightly salted boiling water for 2-3 minutes until they turn pink and are fully cooked. Remove, drain, then peel, leaving the tails on for a nice presentation.
  2. 2 Place the shredded green mango, shredded carrot, and sliced cucumber in a large bowl of ice water for 5 minutes to keep them crisp, then drain well.
  3. 3 Make the sauce by combining the lime juice, shaved palm sugar, halal fish sauce, salt, and cooled boiled water in a small bowl. Stir until the palm sugar is completely dissolved. Taste and adjust the sweet-sour-salty balance as needed.
  4. 4 In a large serving bowl, combine the green mango, carrot, cucumber, sliced shallots, and bird's eye chilies. Toss gently to mix well.
  5. 5 Arrange the boiled shrimp on top of the vegetable mixture, then pour the lime sauce evenly over the entire salad.
  6. 6 Add fresh Thai basil leaves, then sprinkle the chopped peanuts and fried shallots on top as a finishing touch.
  7. 7 Serve immediately while fresh so the vegetables stay crisp and don't wilt from the sauce.

💡 Tips

• Choose green mangoes that are still firm and tart for the crunchiest texture; avoid mangoes that have started to ripen.

• Don't mix in the sauce too far ahead of serving, as it will cause the vegetables to wilt and become watery—it's best to toss it in right before eating.

• For more flavorful shrimp, boil them with a few kaffir lime leaves or a bit of smashed ginger added to the water.

• You can substitute boiled shredded chicken or fried tofu for those who don't like seafood—it's still delicious and refreshing.
