  • 4 slices whole wheat bread
  • 2 hard-boiled eggs
  • 2 tbsp mayonnaise
  • 1 tsp mustard (optional)
  • 2 leaves lettuce
  • A pinch of salt and pepper
  • 1/2 tsp lemon juice

👩‍🍳 Instructions

  1. 1 Roughly chop the hard-boiled eggs with a fork
  2. 2 Mix with mayonnaise, mustard, salt, pepper, and lemon juice
  3. 3 Stir until well combined
  4. 4 Place lettuce on top of 1 slice of bread
  5. 5 Spoon the egg mayo mixture over the lettuce and spread evenly
  6. 6 Cover with the other slice of bread
  7. 7 Press down gently, then cut diagonally
  8. 8 Wrap neatly with baking paper or cling wrap
  9. 9 Store in the lunchbox

💡 Tips

• Don't overcook the eggs — a slightly creamy yolk tastes better

• Add a little lemon juice so the mayo doesn't taste too eggy

• You can add thin cucumber slices for a crunchy texture

• Cut the sandwich right before heading out so the bread doesn't get soggy
