👩🍳 Instructions
- 1 Roughly chop the hard-boiled eggs with a fork
- 2 Mix with mayonnaise, mustard, salt, pepper, and lemon juice
- 3 Stir until well combined
- 4 Place lettuce on top of 1 slice of bread
- 5 Spoon the egg mayo mixture over the lettuce and spread evenly
- 6 Cover with the other slice of bread
- 7 Press down gently, then cut diagonally
- 8 Wrap neatly with baking paper or cling wrap
